For those cold winter evenings you know are coming...

This past weekend we had our first real cold snap of the season. It made me want to bake and make homemade stews . I thought I'd pass along one of my favorites. It's easy, inexpensive to make, and satisfies the tummy.

Orange-Vegetable Soup
saute in a lg pot:
2-3 med-lg onions, peeled and sliced in
2 T butter
Add:
1 1/4 lb carrots, peeled and sliced
14 oz potatoes, peeled and sliced
5T of tomato paste or one small beet, peeled and sliced
3 cups water
2 cloves garlic, sliced
2 t salt
3/4 dried basil
1/4 t nutmeg
1/4 t pepper
Simmer 15-20 min until all veggies are tender
Run through a blender 1 to 1 1/2 cup at a time.
With one cup of water rince pot and pour into blender to rinse blender and add to the rest of the puree
Return to pot, stir and reheat
Serve with sour cream (swirling it in the middle makes it look like the milky way ) and parsley (perhaps symbolizing the planets). Weaving a story around the galaxy may get those little ones to eat their veggies. Who knows.
